Maybe it's because, just a few verses before this, they are complaining about the Jews who have the Torah, yet still deny Allah, "How come they unto thee for judgment when they have the Torah, wherein Allah hath delivered judgment (for them)? Yet even after that they turn away. Such (folk) are not believers." Sura 5:43
I guess it is just a little to inconvenient for them to accept the fact that Isaac obtained the promised blessing rather than Ishmael... in the Torah.
But they even twist the interpretation of the Torah so that they can justify their continued bowing toward and kissing black stones (among other things).
"If God did promise Isaac that his descendants would be in number as the dust of the Earth, as the stars in the sky, and as the sand in the seashore, this was a false promise which has not been fulfilled."
